VEGAN MATCHA DALGONA- AKA Whipped Matcha Magic

Dalgo-what?!

Okay…By now I’m sure many of you have caught onto this new whipped coffee trend that has taken social media by storm! It’s everywhere… and boy, does it look darn delicious!

With the weather being so warm and sunny, I was inspired to try my own hand at Dalgona MATCHA (because as you might have learned by now.. I have a serious obsession with matcha!)

Dalgona Matcha (or coffee) is essentially a matcha latte with pizzazz.  It’s a tall glass of plant-based milk, over ice, topped with whipped matcha foam! I mean come on… not only does this drink look gorgeous, but the velvety texture and rich flavor is DIVINE!

Fairly easy to make, this *scrummy recipe requires but a simple four ingredients: aquafaba, sugar (cane, or coconut), matcha powder, and oat milk.

Some of you may be wondering… What the heck is Aquafaba?

Aquafaba is the thick liquid that is produced from soaking legumes such as chickpeas! Yup, believe it or not this viscous water is a popular egg white replacement in vegan cuisine. You can use aquafaba to make vegan baked goods, mayo, meringue, macaroons, mousse, marshmallow fluff, and of course dalgona whip! After opening a can of chickpeas simply reserve the liquid from the can and set aside before rinsing your legumes.

The Whipping Process

Before we get to the part on how to make this drink, let’s quickly talk about whipping techniques! In order to get that smooth, fluffy, whipped texture, you will need to use one of the three: a whisk, hand mixer, or a milk frothing wand. I have yet to purchase a hand mixer (although I do have my eye on the light pink one from Kitchenaid) so I decided to go with the good ol’ whisk. This does work but let me tell you… it takes way more then 10 minutes and is an arm workout! Worth it? Absolutely! I also tried using my milk frothing wand but was only able to get it so far without the resistance of the whip becoming too much for the wand to power through; however, this is a great way to start your fluff and then continue it by hand with a whisk! I can already tell this drink is going to become an obsession this summer and just from making it, man, my arms are going to be shredded! Haha ok maybe just toned, but you will see what I mean if you whisk this yourself! If you have a hand mixer, I highly recommend you use it to save time and energy… although your arms won’t look as good as us whiskers! You want to whip until you are able to create stiff peaks with your matcha fluff.

How to Make this Whipped Matcha Magic

Making this requires five simple steps (This recipe is for one serving)

Step 1: Place 2-3 Tbsp of aquafaba in a bowl and begin to whisk/ mix. Whip until stiff peaks form.

Step 2: About 3-5 minutes in add your sugar of choice. I have made it with both organic cane sugar, and organic coconut sugar, both of which turned out delicious! I used about 1 tsp, as I prefer mine to be less on the sweet side, but you can add more as you see fit. Remember this recipe is vegan so you can dip your finger in to test the level of sweetness. If your tasting before things become fully whipped you will get a little of that chickpea flavor… don’t worry it all comes together in the end, especially once we add matcha which is step number 3.

Step 3: Once you have stiff peaks, SIFT 1 tsp of matcha powder into your whip. Sifting will ensure that the texture is smooth and well incorporated.

Step 4:  Pour a glass of oat milk (my personal favorite but you are more than welcome to substitute with another alternative milk option) and top with your gorgeous matcha whip!

Step 5: Most Importantly, ENJOY!
