Carrot Cake Bliss Balls (Vegan, Gluten-Free, Raw)

I don’t know about you, but I LOVE a good bliss ball!

These no bake, carrot cake, “BUNNY BITES” are the perfect pre-workout snack, mid-day pick me up, or healthier,  indulgent treat to satisfy your sweet tooth.

I created these treats in celebration of Easter weekend, and while it was my intention to share the recipe with you on Sunday afternoon, after snacking on these bliss balls, I decided the recipe just wasn’t quite there. I wanted more carrot, more spice, and more texture to really bring that carrot cake flavor through! So I decided to go back to the kitchen and start a new recipe.

And boy, am I glad I did!

Batch number 2 was exactly what I was wanting! These have more moisture, more texture, and a more complex flavor than my initial recipe. Overall these Bunny Bites will take you about 10-15 minutes to make, and all you need is a food processor, a side dish, and a little bowl of shredded coconut to roll your bliss balls in.

How to Make Carrot Cake Bliss Balls

One of my favorite things about making energy bites like these, is how easy they are to prepare. Just gather your ingredients, toss them into a food processor, pulse in increments for a couple of minutes, roll into balls and boom, all done! The Jackson 5 said it best, “It’s as easy as 1, 2, 3, simple as do-re-mi, ABC one, two, three baby you and me girl”

To start place your carrots into the food processor and pulse until the carrots are shredded into tiny slivers. Scoop out the carrots and set aside for later use. Next, place your pecans and coconut flakes into the food processor and blend together for about 30 seconds until a fine granola-like texture forms. Toss in your gluten-free oats, dates, and spices and pulse again. Finally, add in your almond butter (My favorite brand is Wild Friends), and maple syrup and pulse until well incorporated. After your ingredients are combined scoop out a tbsp size amount, roll it into a ball, and coat it in coconut. For a more solid hold refrigerate your bliss balls for about 2 hours (or overnight) before consuming… if you can resist them for that long!

The texture will be a little sticky. If you find that your batter is too sticky to roll between your palms, sprinkle in some oat flour, or a few more oats and blend again.

Optional Additions

I personally like to add vital proteins collagen powder (protein) into my bliss balls to give them that extra nutritional boost! This recipe makes a big batch, so I recommend adding about four scoops of collagen into your batter (~40 grams of protein total). This is a great addition if you’re looking to make these as a pre-or post-workout snack! Collagen is NOT vegan friendly so if you are wanting to make your bunny bites 100% vegan, either omit this option or substitute it with a vegan protein powder of your choice (keep in mind, flavored protein powders will change the flavor.. obviously..  so start with a little and do taste tests as you add more to make sure your not overpowering the carrot cake flavor).

If you’re like me, and need a little deserty-something or other in the evening after dinner to feel fully satisfied, I’ve got your back. Adding in white chocolate chips and/or raisins, either into the batter or placing one or two in the center of your rolled balls, is the perfect way to give these treats that extra flare of sweetness for a healthier desert option. I did this on Sunday night and found that one white chocolate chip in the center of a bliss ball perfectly satisfied my hankering for dessert!
