Vegan GingerBread Cookie Recipe

Gingerbread cookies always hit the spot this time of the year. Being one of my favorites, I wanted to find a way to make these bad boys vegan and gluten free without losing their soft, chewy texture!

While making the dough, I personally like to taste check. And hey! That’s the best part about these cookies being vegan.. you can eat the dough in the process! Just make sure to leave enough to bake 😉

Keep in mind that this is a softer dough, and may require more flour than called for, but use your best judgement. You want the dough to come out clean without clinging to your hands, spatula, or bowl.

I love how these cookies taste on their own and therefore did not use an icing; however, if you want to decorate your gingerbread men or give them that extra hint of sweetness, you can create your own royal icing by combining 2 1/4 cup of confectioners sugar (powdered sugar) with 3 tbsp of warm water!
